Something technical, something that happens somewhere at the end of the process. In reality, matcha grinding is one of the most decisive steps for what you ultimately experience in the bowl. Color, aroma, foam, mouthfeel and even bitterness are helped shape here.   <\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">Matcha grinding is not simply making the leaf as fine as possible. It is controlled breaking down, under strict conditions. Those who underestimate this will see beautiful tencha turn into a dull, sharp, flat powder.  <\/p>\n\n<p class=\"wp-block-paragraph\">The explanations in this article are based on the practical experience and teaching materials of <strong>Richard Schukkink<\/strong>, founder of the <a href=\"https:\/\/itcacademy.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">International Tea and Coffee Academy<\/a>.<\/p>\n\n<p class=\"has-background wp-block-paragraph\" style=\"background-color:#dddddd\"><em>This article is part of the Matcha dossier. That means particle size directly affects how the powder behaves in water and in your mouth. <\/p>\n\n<p class=\"wp-block-paragraph\">Giving too coarse particles:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>sandy mouthfeel<\/li>\n\n\n\n<li>unstable foam<\/li>\n\n\n\n<li>rapid bitter release<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Grinding too extremely fine can actually lead to:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>rapid oxidation<\/li>\n\n\n\n<li>flat aroma<\/li>\n\n\n\n<li>sharp extraction<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The goal is not minimum particle size, but optimal distribution. These mills turn slowly, gradually breaking down the blade between two precisely ground stones. <\/p>\n\n<p class=\"wp-block-paragraph\">The major advantage of this method is temperature control. The low speed keeps heat generation to a minimum. This is crucial, because heat accelerates oxidation and flavor loss.  <\/p>\n\n<p class=\"wp-block-paragraph\">In addition, a stone mill system often produces a particle shape favorable to:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>creamy mouthfeel<\/li>\n\n\n\n<li>stable foam<\/li>\n\n\n\n<li>even dispersion<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The downside is capacity. Stone mills produce very little per hour. That&#8217;s not romance, it&#8217;s physics. These techniques can be more efficient and process larger volumes. <\/p>\n\n<p class=\"wp-block-paragraph\">They are mainly used for:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>industrial applications<\/li>\n\n\n\n<li>blends<\/li>\n\n\n\n<li>matcha for latte, RTD or food<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The risk is in speed. Higher speed often means: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>more heat<\/li>\n\n\n\n<li>more oxygen contact<\/li>\n\n\n\n<li>faster degradation<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Therefore, modern techniques require tight process control. Chlorophyll is sensitive to heat, and volatile flavor components disappear quickly with elevated temperature. <\/p>\n\n<p class=\"wp-block-paragraph\">Grinding too hot can lead to:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>duller color<\/li>\n\n\n\n<li>flat aroma<\/li>\n\n\n\n<li>&#8220;old green&#8221; odor profile<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Therefore, serious producers work with:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>low speeds<\/li>\n\n\n\n<li>refrigerated environments<\/li>\n\n\n\n<li>batch processing<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Grinding is not a mechanical operation alone, but a form of preservation.<\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Particle size and foaming behavior<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">The way matcha foams is closely related to particle size and distribution. A properly ground matcha, when whisked, forms a fine, homogeneous micro-foam. <\/p>\n\n<p class=\"wp-block-paragraph\">When the distribution is too wide, it arises:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>large bubbles<\/li>\n\n\n\n<li>rapidly collapsing foam<\/li>\n\n\n\n<li>uneven surface<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">That has nothing to do with beating technique alone. The foundation is laid in grinding. <\/p>\n\n<h2 class=\"wp-block-heading\">Matcha<strong>grinding and oxidation<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Once matcha is ground, the contact area with oxygen increases dramatically. This makes the product vulnerable. That difference is often in: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>grinding<\/li>\n\n\n\n<li>temperature control<\/li>\n\n\n\n<li>disposition of the blade<\/li>\n\n\n\n<li>freshness after grinding<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">A velvety mouthfeel is rarely accidental. It is the result of consistent choices at this stage. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>What grinding cannot solve<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Grinding cannot fix a bad base. It: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>does not mask coarse grain<\/li>\n\n\n\n<li>does not correct wrong cultivar<\/li>\n\n\n\n<li>does not soften hard catechin structure<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Milling reinforces what is already there. Like shade cultivation, it works optimally only within a well-designed system. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Summary<\/strong> about matcha grinding<\/h2>\n\n<p class=\"wp-block-paragraph\">Matcha grinding is a precision process. It is not speed or fineness that determines quality, but control over temperature, oxygen and particle distribution. <\/p>\n\n<p class=\"wp-block-paragraph\">Anyone who understands how grinding works understands why some matchas are creamy and smooth, while others always remain skimpy.
