Yet genetics is precisely one of the most important factors explaining why one matcha is smooth and full-bodied, while another always retains a hint of sharpness or grassiness, no matter how carefully you prepare it. <\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">The cultivar determines not only how a tea plant grows, but also how it responds to shade, the structure of its leaves, and how well it can be processed into powder later on. With matcha, the cultivar is not a minor detail, but a fundamental factor. <\/p>\n\n<p class=\"wp-block-paragraph\">The information in this article is based on the teaching materials and practical experience of <strong>Richard Schukkink<\/strong>, founder of the <a href=\"https:\/\/itcacademy.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">International Tea and Coffee Academy<\/a>.<\/p>\n\n<p class=\"has-background wp-block-paragraph\" style=\"background-color:#dddddd\"><em>This article is part of the Matcha dossier. Through selection and breeding, traits that are desirable for cultivation and flavor are established. <\/p>\n\n<p class=\"wp-block-paragraph\">When it comes to tea, this includes:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>growth rate<\/li>\n\n\n\n<li>sheet size and thickness<\/li>\n\n\n\n<li>the relationship between the leaf, stem, and vein<\/li>\n\n\n\n<li>disease resistance<\/li>\n\n\n\n<li>response to shadow<\/li>\n\n\n\n<li>composition of amino acids and catechins<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">When it comes to matcha, the last two factors are particularly crucial. This places demands on the plant. Some cultivars respond positively to this by retaining amino acids and building up chlorophyll. Other cultivars, however, become unbalanced.   <\/p>\n\n<p class=\"wp-block-paragraph\">Common problems with less suitable cultivars include:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>a tone that is too green and raw<\/li>\n\n\n\n<li>a musty or stale smell<\/li>\n\n\n\n<li>a lack of depth<\/li>\n\n\n\n<li>bitterness that doesn&#8217;t go away, even at low temperatures<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">That is why traditional matcha cultivars are often selected for their ability to thrive in the shade. The cultivar plays a direct role in this. <\/p>\n\n<p class=\"wp-block-paragraph\">Leaves with thin lamina, less prominent veins, and limited stem development are better suited for tencha processing and fine grinding. They produce a powder that feels creamy and foams consistently. Cultivars with coarser veins or a thicker leaf structure tend to result in a gritty texture, an uneven mouthfeel, and a harsh, bitter aftertaste. This difference often only becomes apparent after grinding. In loose-leaf tea, it may remain hidden, but in matcha, it is inevitably revealed.    <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Classic and modern cultivars<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">In traditional matcha-producing regions, you\u2019ll find cultivars that have been used for tencha and matcha for decades, sometimes even longer. They\u2019ve been selected for their flavor profile, not for maximum yield. <\/p>\n\n<p class=\"wp-block-paragraph\">At the same time, modern cultivars have been developed that are more resistant to:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>higher temperatures<\/li>\n\n\n\n<li>mechanical harvesting<\/li>\n\n\n\n<li>diseases<\/li>\n\n\n\n<li>intensive production<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">These modern cultivars are widely used in warmer regions and large-scale systems. The same genetic makeup can result in completely different outcomes in different regions. <\/p>\n\n<p class=\"wp-block-paragraph\">A cultivar known for its deep umami in a cooler region may grow more quickly in a warmer climate, retain fewer amino acids, and develop a fresher, more direct profile. Conversely, a modern cultivar in a classic region can become surprisingly refined. That is why a cultivar name alone means little. It only gains meaning when combined with terroir and management.   <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Breeding and the Future of Matcha<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Modern breeding focuses not only on yield, but increasingly on quality under specific conditions. For matcha, this means developing cultivars that: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>Dealing better with prolonged shade<\/li>\n\n\n\n<li>retain color better<\/li>\n\n\n\n<li>develop less pungent bitter compounds<\/li>\n\n\n\n<li>be suitable for mechanical processing<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">This development is important because climate change and increased production scale are placing new demands on cultivation. With matcha, however, that\u2019s an oversimplification. <\/p>\n\n<p class=\"wp-block-paragraph\">Cultivar explains:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Why certain matcha varieties are suitable for koicha<\/li>\n\n\n\n<li>why some people always keep a sharp edge<\/li>\n\n\n\n<li>why the color remains stable or fades quickly<\/li>\n\n\n\n<li>why the mouthfeel is creamy or, conversely, dry<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Anyone who takes matcha seriously cannot ignore the cultivar.<\/p>\n\n<p class=\"has-background wp-block-paragraph\" style=\"background-color:#dddddd\"><em>This article is part of the Matcha dossier.
