In reality, they are two fundamentally different preparations, each with its own technical requirements and flavor objectives.  <\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">The difference between usucha and koicha isn\u2019t just a matter of the amount of water or powder. It has to do with leaf selection, processing, grinding, and even the purpose for which matcha is intended in the first place. Anyone who understands that difference will view matcha differently and use it more thoughtfully.  <\/p>\n\n<p class=\"wp-block-paragraph\">The information in this article is based on the practical experience and teaching materials of <strong>Richard Schukkink<\/strong>, founder of the <a href=\"https:\/\/itcacademy.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">International Tea and Coffee Academy<\/a>.<\/p>\n\n<p class=\"has-background wp-block-paragraph\" style=\"background-color:#dddddd\"><em>This article is part of the Matcha dossier. The matcha is whisked with water to create a liquid beverage with a fine foam.  <\/p>\n\n<p class=\"wp-block-paragraph\">Koicha means \u201cthick tea.\u201d Here, matcha is mixed with a much smaller amount of water to form a syrupy substance without foam. The matcha should have enough umami to maintain its depth, but it may also exhibit a slight bitterness or a fresh, green note. <\/p>\n\n<p class=\"wp-block-paragraph\">Typical characteristics of matcha used for usucha:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>bright green color<\/li>\n\n\n\n<li>stable, fine foam<\/li>\n\n\n\n<li>vibrant aroma<\/li>\n\n\n\n<li>mild bitterness<\/li>\n\n\n\n<li>relatively forgiving during preparation<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Usucha allows for more variation in water, temperature, and the whisking technique. Because the matcha is consumed in high concentrations, any imbalance becomes immediately apparent. Bitterness has nowhere to go. Astringency is immediately noticeable.   <\/p>\n\n<p class=\"wp-block-paragraph\">Matcha suitable for koicha must therefore:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>are extremely low in pungent bitter compounds<\/li>\n\n\n\n<li>rich in amino acids<\/li>\n\n\n\n<li>rich and full-bodied in flavor<\/li>\n\n\n\n<li>completely free of rough edges<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Many matcha varieties that work well in usucha fall short when used in koicha. This isn\u2019t a quality issue, but rather a mismatch between the product and its intended use. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Leaf Selection and Harvest<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">For koicha, leaves from very early harvests are often used, sometimes sourced from older plants or specially selected sections of the field. These leaves typically contain: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>higher concentrations of amino acids<\/li>\n\n\n\n<li>less coarse texture<\/li>\n\n\n\n<li>less prominent veins<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Usucha can be made from a wider selection of ingredients. This increases production volume and makes the styles more diverse. <\/p>\n\n<p class=\"wp-block-paragraph\">So these differences don&#8217;t begin in the bowl, but in the field.<\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Grind and Texture<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Koicha has higher requirements for grinding than usucha. Because the powder is used in high concentrations, it must be extremely uniform. Even slight variations in particle size can be felt as graininess or resistance.  <\/p>\n\n<p class=\"wp-block-paragraph\">Matcha for usucha can have a little more variation, as long as the foam remains stable and the mouthfeel doesn&#8217;t become thin.<\/p>\n\n<p class=\"wp-block-paragraph\">Here, once again, you can see that style and technique reinforce each other. The foam softens the bitterness and releases the aromas. The motion is quick and rhythmic.  <\/p>\n\n<p class=\"wp-block-paragraph\">In koicha, no air is incorporated. The motion is slow and controlled\u2014more like stirring than whisking. The goal is a glossy, smooth mixture without any bubbles.  <\/p>\n\n<p class=\"wp-block-paragraph\">If you try to whisk koicha the same way you would usucha, you won&#8217;t get a better texture\u2014in fact, you&#8217;ll end up with a worse one.<\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Sensory Differences<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Usucha:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>fresh<\/li>\n\n\n\n<li>light<\/li>\n\n\n\n<li>aromatic<\/li>\n\n\n\n<li>lively<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Koicha:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>deep<\/li>\n\n\n\n<li>concentrated<\/li>\n\n\n\n<li>syrupy<\/li>\n\n\n\n<li>long-term<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">These differences aren&#8217;t just a matter of personal preference. They require a different mindset when tasting. You don&#8217;t drink koicha to quench your thirst, but to savor the experience.  <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Why not every matcha can do both<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">It is sometimes suggested in the market that \u201chigher-quality\u201d matcha is automatically suitable for koicha. That is not true. Suitability for koicha is not an end in itself, but a specific characteristic.  <\/p>\n\n<p class=\"wp-block-paragraph\">Matcha can:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>To excel at usucha<\/li>\n\n\n\n<li>too sharp for koicha<\/li>\n\n\n\n<li>Perfect in a latte<\/li>\n\n\n\n<li>Not suitable for making pure preparations<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">That makes classification difficult, but a user-centered approach is essential.<\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Usucha and koicha outside of the ceremony<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">These differences remain relevant even outside the formal tea ceremony.
