You\u2019re not evaluating an extract, but the whole leaf in liquid form. Everything in the powder ends up in your mouth. That makes matcha honest, but also demanding.<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">Tasting well does not mean looking for individual flavors, but rather recognizing their balance. Umami, bitterness, and mouthfeel together form the structure of matcha. It provides depth, balance, and cohesion.<\/p>\n\n<p class=\"wp-block-paragraph\">You can recognize good umami by:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>a soft, rounded start<\/li>\n\n\n\n<li>a flavor that lingers without becoming heavy<\/li>\n\n\n\n<li>a sense of depth, not of sweetness<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Problems with umami:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Too little umami gives a hollow, thin impression<\/li>\n\n\n\n<li>Too much, unbalanced umami can feel heavy and closed off<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Umami never stands alone. It works best when balanced with bitterness and texture.<\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Bitterness: Inevitable, but Manageable<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Bitterness is not a flaw in matcha. Without bitterness, matcha would be flat. None of these elements stands alone; together, they form the structure of the experience. Good matcha carries the palate. Poor matcha is harsh or falls flat.
